This past weekend I “rediscovered” couscous after a length of time focusing on quinoa. Couscous absorbs flavors so well! With just a touch of curry powder and pinch of salt it was well seasoned and ready to be stuffed into my red bell peppers with some roasted broccoli and Quorn chik’n. After roasting and devouring the dish I remembered how great (and easy!) couscous is in meals, and now wraps and bell peppers beware – couscous is here to stay for awhile!
